👩🍳 How to make Pori Urundai
- Spread puffed rice on a wide, flat tray.
- If the puffed rice is slightly damp or soft (from humidity), toast in a dry kadai on low heat for 2–3 minutes until completely crispy and light.
- Cool on the tray.
- The puffed rice must be very dry and crispy — any moisture will prevent the jaggery from binding properly.
- In a heavy-bottomed saucepan, combine jaggery powder and ¼ cup water over medium heat.
- Stir until jaggery completely dissolves (2 minutes).
- Continue cooking WITHOUT stirring on medium heat for 4–6 minutes.
- Test syrup consistency: drop a small amount into a bowl of cold water — if it forms a soft, pliable ball that holds shape (soft ball stage / 115°C), it is ready.
- If it dissolves immediately, cook longer.
- If it forms a hard, cracking ball, it has cooked too far.
- Once syrup reaches soft ball stage, add cardamom powder and dry ginger powder.
- Remove from heat immediately — work fast from this point as jaggery hardens quickly.
- Pour the hot jaggery syrup over the puffed rice in the tray.
- Using a spatula, quickly toss and coat all puffed rice with the syrup — every grain should be coated and the mixture should clump together.
- Grease both palms generously with ghee.
- Take a handful (about ⅓ cup) of the coated puffed rice while it is still warm and pliable.
- Press and shape firmly between palms into a compact ball.
- The warm syrup is still moldable — work quickly as it hardens as it cools.
- If syrup hardens before all balls are shaped, gently warm the remaining mixture by placing it near a warm stove for 30 seconds.
- Place shaped balls on the tray.
- Cool for 15–20 minutes at room temperature — the jaggery syrup hardens into a firm binding as it cools.
- The finished balls should feel firm and hold their shape when squeezed gently.
📖 Cultural notes
Pori urundai is THE sweet of Karthigai Deepam — every Tamil home makes them on this festival of lights (November/December). On Karthigai evening, families light rows of oil lamps outside their homes, and pori urundai are placed near the lamps as offerings. Children receive them as treats. The simplicity of the recipe — just puffed rice and jaggery — symbolizes abundance from the most humble ingredients. In Tiruvannamalai, enormous quantities of pori urundai are made for the Karthigai Deepam festival at the Arunachaleswarar Temple. ---
