Flat egg omelettes drop-cooked directly into a spiced onion-tomato kuzhambu — a popular, protein-rich Tamil lunch that combines two separate preparations into one hearty gravy dish. The omelettes absorb the kuzhambu and become pillowy and flavourful.

👩🍳 How to make Omelette Kuzhambu
- Make the omelettes (medium heat): In a bowl, beat eggs with finely chopped onion, green chilli, curry leaves, turmeric, chilli powder, and ¼ tsp salt. Mix thoroughly. Heat a flat pan (tawa) with 2 tsp oil on medium. Pour half the egg mixture into a thin, flat layer (like a dosa — 5–6 mm thick, not thick like an omelette). Cook 2–3 minutes until top is set and bottom is golden. Flip — 1 minute more. Slide out. Repeat with remaining egg mixture. Cut each omelette into 4–6 rough pieces. Keep aside.
- Start the kuzhambu (medium heat): Heat sesame oil in a kadai or wide pan. Add mustard seeds — crackle. Add curry leaves (15 seconds). Add chopped onions. Fry for 8–10 minutes on medium, stirring regularly, until deep golden-brown and reduced.
- Add ginger-garlic paste (medium heat): Add ginger-garlic paste. Fry for 2–3 minutes, stirring constantly, until raw smell is gone.
- Add tomatoes (medium heat): Add chopped tomatoes. Cook for 7–8 minutes until completely broken down and oil separates from the masala.
- Add spices (medium heat): Add red chilli powder, coriander powder, turmeric, and sambar powder. Fry 1 minute. Add ¾ tsp salt and ½ cup water. Stir well. Bring to a boil, then simmer 5 minutes until the gravy is thick and oil separates.
- Add omelette pieces (low heat): Reduce to low. Gently add the omelette pieces into the kuzhambu. Spoon gravy over them. Do NOT stir aggressively — the omelette will break. Simmer very gently on low for 5–7 minutes, occasionally tilting the pan and spooning gravy over the pieces to ensure they absorb the flavour. The omelettes will swell slightly and turn a deep reddish-brown.
- Rest and serve: Turn off heat. Rest 5 minutes. Serve gently, keeping omelette pieces intact. Serve over plain rice.
