👩🍳 How to make Oats Adai
- Place rolled oats in a dry blender and pulse 5–6 times to a coarse crumble (not powder).
- The oat crumble should still have visible flakes — not fine powder.
- Set aside.
- Drain all soaked dals and rice.
- Grind together in a blender with dried red chilies, ginger, garlic, cumin seeds, fennel seeds, and asafoetida.
- Add 3–4 tbsp water.
- Grind to a coarse, grainy paste — the same texture as traditional adai batter.
- Mix ground dal batter with oat crumble, diced onion, curry leaves, grated coconut, coriander, and green chilies.
- Add salt.
- Mix thoroughly.
- If the batter is too thick to spread on tawa, add 2–3 tbsp water.
- Batter should be thick and scoopable.
- Heat tawa on medium-high heat.
- Add ½ tsp oil and spread.
- Pour a ladle of batter onto the tawa.
- Spread into a disc about 18 cm diameter.
- Make a small hole in the center.
- Drizzle ½ tsp oil around edges and center hole.
- Cook on medium heat for 3 minutes until edges lift and bottom is golden with dark spots.
- Flip and cook second side for 2 minutes until golden.
- Serve with avial, jaggery-butter, or coconut chutney.
📖 Cultural notes
Oats adai represents the evolving food culture of urban Tamil Nadu — health-conscious young professionals in Chennai applying ancestral recipes with modern nutritional awareness. Tamil Nadu's traditional multi-dal adai was already a nutritional powerhouse; the addition of oats aligns it with global superfood trends while maintaining its essential Tamil character. Featured in Tamil food blogs since 2010s, it has become standard in Chennai gym-goer breakfast menus. ---
