The most beloved of all Tamil sambars — toor dal simmered with fresh drumstick pods in a tamarind-sambar powder base. The drumstick's fibrous pods impart an earthy sweetness to the broth as they cook, and are sucked clean at the table. Served at virtually every Tamil dinner.

👩‍🍳 How to make Muringakkai Sambar

  1. Temper and fry aromatics (medium heat): Heat sesame oil. Mustard — crackle. Cumin (5 sec). Red chillies, curry leaves, asafoetida. Add shallots — fry 5–6 minutes until golden. Add tomatoes — cook 4 minutes softened.
  2. Add dal, drumstick, and liquids (medium heat): Add mashed toor dal, drumstick pieces, strained tamarind, sambar powder, turmeric, salt, and jaggery. Add ½ cup water if needed. Stir. Bring to a rolling boil.
