Chicken Saalna (Tamil Salna Gravy)

The thin, intensely spiced tomato-onion gravy that is the quintessential accompaniment to Tamil parotta — a salna specifically designed to be soaked up by the flaky layers of parotta or idiappam. Thinner than a regular kuzhambu, spicier, and intensely aromatic.

👩🍳 How to make Chicken Saalna
- Grind the salna masala (no heat): Grind grated coconut, soaked poppy seeds, fennel, pepper, cloves, cinnamon, and cardamom with water to a smooth, creamy paste.
- Temper whole spices and onions (medium heat): Heat oil. Add cinnamon, cardamom, cloves, fennel seeds — fry 30 sec. Add red chillies and curry leaves (15 sec). Add onions — fry 12–14 minutes until deep golden-brown.
- Add ginger-garlic (medium heat): Fry 3 minutes until raw smell is gone.
- Add tomatoes (medium heat): Add all 4 large tomatoes. This larger quantity of tomato gives salna its thinner, more liquid, slightly sour character compared to regular kuzhambu. Cook 10–12 minutes until tomatoes are completely disintegrated and the masala is thick.
- Add spice powders and ground masala (medium heat): Add red chilli powder, coriander powder, turmeric, fennel powder. Fry 1 minute. Add the coconut-poppy paste. Fry 4 minutes until raw smell is gone.
- Add chicken (medium-high heat): Add chicken. Sear 5 minutes, tossing, until sealed.
- Add water and cook to thin consistency (medium heat): Add 2 cups water and salt. This is more water than a regular kuzhambu — the thin consistency is intentional. Bring to a boil. Simmer 20–25 minutes until chicken is fully cooked. Add garam masala. Stir.
- Check consistency: The salna should be thin enough to pool on a plate — much thinner than a regular kuzhambu. If too thick, add ¼ cup hot water. The parotta needs a thin, soak-able gravy.
- Serve: With hot fresh parotta or idiappam. The parotta is torn into pieces and dipped directly into the salna.
