- Heat ghee in heavy-bottomed pan over low heat.
- Add semolina; toast 2 minutes while stirring (prevents raw taste).
- Pour water slowly while stirring constantly (prevents lumps).
- Bring to boil over medium heat, stirring.
- Reduce to low heat; simmer 10 minutes, stirring frequently.
- Pour milk slowly while stirring.
- Add jaggery, turmeric, and cardamom; stir until jaggery dissolves.
- Add salt; taste and adjust.
- Simmer 3 more minutes until porridge is creamy and thick.
- Transfer to bowls; top with roasted nuts.
- Serve warm.
