👩‍🍳 How to make Spiced Yogurt Rice

  1. Heat oil in large pan over medium heat.
  2. Add mustard seeds, cumin seeds, dried chilli, curry leaves; splutter 30 seconds.
  3. Add onion; fry 1 minute until translucent.
  4. Add green chillies; fry 20 seconds.
  5. Add turmeric and black pepper; fry 20 seconds.
  6. Add cooled rice; toss gently 2 minutes.
  7. Reduce to low heat; pour yogurt slowly while tossing gently (do not overheat or yogurt will curdle).
  8. Toss 1 minute until yogurt is evenly distributed.
  9. Add salt; taste and adjust.
  10. Remove from heat; fold in coriander.
  11. Serve at warm or room temperature.
