👩🍳 How to make Spiced Yogurt Rice
- Heat oil in large pan over medium heat.
- Add mustard seeds, cumin seeds, dried chilli, curry leaves; splutter 30 seconds.
- Add onion; fry 1 minute until translucent.
- Add green chillies; fry 20 seconds.
- Add turmeric and black pepper; fry 20 seconds.
- Add cooled rice; toss gently 2 minutes.
- Reduce to low heat; pour yogurt slowly while tossing gently (do not overheat or yogurt will curdle).
- Toss 1 minute until yogurt is evenly distributed.
- Add salt; taste and adjust.
- Remove from heat; fold in coriander.
- Serve at warm or room temperature.
