👩‍🍳 How to make Sinki

  1. Soak sinki in warm water 10 minutes; squeeze thoroughly to remove moisture.
  2. Heat oil in pot over medium heat.
  3. Add cumin seeds; let them splutter 20 seconds.
  4. Add onion; fry 2 minutes until softened.
  5. Add garlic and ginger; fry 30 seconds.
  6. Add diced potatoes; stir-fry 2 minutes.
  7. Add sinki and green chillies; fry 2 minutes (blend flavors).
  8. Sprinkle turmeric and black pepper; fry 30 seconds.
  9. Pour water; bring to boil.
  10. Reduce to medium; simmer 12 minutes until potatoes are tender.
  11. Add salt; taste and adjust.
  12. Serve hot; garnish with fresh coriander.
