👩🍳 How to make Sel Roti
- Rinse rice 3 times under cold water; soak in cold water for 5–6 hours (or overnight).
- Drain rice completely; transfer to blender in batches.
- Add milk gradually; blend to smooth, thick paste (no grit).
- Transfer paste to bowl; fold in sugar, mashed banana, cardamom, melted ghee, and salt.
- Whisk until sugar dissolves completely; mixture should be pourable yet thick.
- Add flour if needed; cover and rest 30 minutes at room temperature (starches settle).
- Heat oil/ghee to medium temperature in deep pan (drop of batter should sizzle and rise instantly).
- Use piping bag or ladle to form circles directly in hot oil (counterclockwise motion, 8cm diameter).
- Fry 1–2 rings at a time, 2–3 minutes per side until golden brown with crispy edges.
- Drain on paper towels; cool to room temperature (crisps further as it cools).
