👩‍🍳 How to make Sel Roti

  1. Rinse rice 3 times under cold water; soak in cold water for 5–6 hours (or overnight).
  2. Drain rice completely; transfer to blender in batches.
  3. Add milk gradually; blend to smooth, thick paste (no grit).
  4. Transfer paste to bowl; fold in sugar, mashed banana, cardamom, melted ghee, and salt.
  5. Whisk until sugar dissolves completely; mixture should be pourable yet thick.
  6. Add flour if needed; cover and rest 30 minutes at room temperature (starches settle).
  7. Heat oil/ghee to medium temperature in deep pan (drop of batter should sizzle and rise instantly).
  8. Use piping bag or ladle to form circles directly in hot oil (counterclockwise motion, 8cm diameter).
  9. Fry 1–2 rings at a time, 2–3 minutes per side until golden brown with crispy edges.
  10. Drain on paper towels; cool to room temperature (crisps further as it cools).
