- Heat oil in large pan over medium heat.
- Add onion; fry 2 minutes until translucent.
- Add garlic, ginger, green chillies; fry 30 seconds.
- Add diced tomato and carrot; stir-fry 2 minutes.
- Add turmeric; fry 20 seconds.
- Pour beaten eggs into pan; using spatula, scramble continuously for 4–5 minutes over medium heat until eggs are cooked through but still slightly moist.
- Add salt and black pepper; toss gently.
- Remove from heat; fold in coriander.
- Serve hot with toasted bread or flatbread.
