- Combine all-purpose flour, rice flour, turmeric, garam masala, black pepper, cumin seeds, and salt in bowl.
- Add onion, green chillies, and coriander.
- Add water gradually; mix to thick batter (should coat pumpkin pieces).
- Add pumpkin pieces; coat thoroughly with batter.
- Heat oil in pan to medium-high temperature.
- Carefully drop battered pumpkin pieces into hot oil (one at a time).
- Fry 3–4 minutes per batch, turning occasionally until golden brown.
- Remove with slotted spoon; drain on paper towels.
- Serve hot with chutney or yogurt.
