- Heat oil in pan over medium heat.
- Add onion; fry 2–3 minutes until golden.
- Add garlic and ginger; fry 30 seconds until fragrant.
- Add green chillies; fry 20 seconds.
- Add kinema; stir-fry 2 minutes (distribute throughout).
- Sprinkle turmeric, garam masala, and asafoetida; fry 30 seconds.
- Pour water; bring to boil over medium heat.
- Reduce heat to low; simmer 10 minutes (kinema softens, flavors infuse).
- Add salt; taste and adjust.
- Serve hot over steamed rice; garnish with fresh coriander.
