- Soak gundruk in warm water 10 minutes; squeeze thoroughly to remove excess moisture (retains tang).
- Heat oil in heavy-bottomed pot over medium heat.
- Add onion; fry 2 minutes until translucent (not brown).
- Add garlic and ginger; fry 30 seconds until fragrant.
- Add diced potatoes; stir-fry 2 minutes.
- Add gundruk, turmeric, black pepper, and green chillies; fry 2 minutes (blend flavors).
- Pour water; bring to boil over high heat.
- Reduce to medium-low; simmer 15 minutes until potatoes tender (fork test).
- Add salt; taste and adjust.
- Garnish with fresh coriander; serve piping hot.
