👩‍🍳 How to make Beaten Rice Pudding

  1. Rinse beaten rice under running water 30 seconds; drain thoroughly.
  2. Heat oil in large pan over medium heat.
  3. Add mustard seeds, cumin seeds, dried red chilli, and curry leaves; let them splutter 30 seconds.
  4. Add onion; fry 2 minutes until translucent.
  5. Add green chillies; fry 20 seconds.
  6. Add carrot and green peas; stir-fry 2 minutes.
  7. Add turmeric; fry 20 seconds.
  8. Add drained beaten rice; toss gently 3–4 minutes over medium heat (warm through, fluff).
  9. Add roasted peanuts; toss 1 minute.
  10. Add lemon juice and salt; toss until evenly distributed.
  11. Remove from heat; garnish with fresh coriander.
  12. Serve immediately while warm.
