👩🍳 How to make Beaten Rice Pudding
- Rinse beaten rice under running water 30 seconds; drain thoroughly.
- Heat oil in large pan over medium heat.
- Add mustard seeds, cumin seeds, dried red chilli, and curry leaves; let them splutter 30 seconds.
- Add onion; fry 2 minutes until translucent.
- Add green chillies; fry 20 seconds.
- Add carrot and green peas; stir-fry 2 minutes.
- Add turmeric; fry 20 seconds.
- Add drained beaten rice; toss gently 3–4 minutes over medium heat (warm through, fluff).
- Add roasted peanuts; toss 1 minute.
- Add lemon juice and salt; toss until evenly distributed.
- Remove from heat; garnish with fresh coriander.
- Serve immediately while warm.
