- Blanch mung bean sprouts in boiling water 2 minutes; drain and cool.
- Heat oil in large pan over medium-high heat.
- Add onion; fry 2 minutes until translucent.
- Add garlic, ginger, green chillies; fry 30 seconds.
- Add diced potatoes and carrot; stir-fry 3 minutes.
- Add turmeric and garam masala; fry 30 seconds.
- Add blanched sprouts; toss 2 minutes.
- Add salt and black pepper; toss.
- Add lemon juice; toss 30 seconds.
- Remove from heat; fold in coriander.
- Serve warm.
