👩‍🍳 How to make Aloo Sadeko

  1. Boil potatoes in salted water 12–15 minutes until just tender (firm enough to hold shape).
  2. Drain and cool slightly; dice into 1cm cubes.
  3. Heat oil in large pan over medium heat.
  4. Add onion; fry 2 minutes until translucent.
  5. Add garlic and green chillies; fry 30 seconds until fragrant.
  6. Add diced potatoes; toss gently 2 minutes (coat with oil).
  7. Sprinkle turmeric, garam masala, and black pepper; toss 1 minute.
  8. Add crushed peanuts; toss 30 seconds.
  9. Add lemon juice and salt; toss gently 1 minute (potatoes should not break).
  10. Remove from heat; garnish with fresh coriander.
  11. Serve warm as side or with sel roti.
