👩‍🍳 How to make Safed Maas

  1. Marinate lamb in yogurt 20 min.
  2. Make paste of onions, ginger, garlic, soaked almonds.
  3. Heat oil 180°C, fry lamb 4 min, remove.
  4. Cook onion-almond paste 6 min until light golden.
  5. Add black pepper powder, cumin, cinnamon, clove, cardamom, bay leaf.
  6. Cook 2 min.
  7. Return lamb, add water, salt.
  8. Pressure cook 6 whistles (12 min).
  9. After release, simmer 20 min until meat tender.
  10. Add coconut milk, cream.
  11. Simmer 10 min more, adjust consistency.
  12. Final taste: creamy, subtle spice, almond richness.
