👩🍳 How to make Safed Maas
- Marinate lamb in yogurt 20 min.
- Make paste of onions, ginger, garlic, soaked almonds.
- Heat oil 180°C, fry lamb 4 min, remove.
- Cook onion-almond paste 6 min until light golden.
- Add black pepper powder, cumin, cinnamon, clove, cardamom, bay leaf.
- Cook 2 min.
- Return lamb, add water, salt.
- Pressure cook 6 whistles (12 min).
- After release, simmer 20 min until meat tender.
- Add coconut milk, cream.
- Simmer 10 min more, adjust consistency.
- Final taste: creamy, subtle spice, almond richness.
