👩🍳 How to make Safed Maas
- Marinate lamb in yogurt 30 min.
- Make smooth paste of onions, ginger, garlic, almonds, cashews.
- Heat oil 180°C, fry lamb 5 min, remove.
- Cook almond-cashew paste in same oil 8 min until light golden.
- Add whole spices, black pepper, cumin, mace, cook 2 min.
- Return lamb, add water, salt.
- Pressure cook 6 whistles (12 min).
- Release, simmer 25 min until lamb tender.
- Add coconut milk, cream, simmer 12 min more.
- Taste: creamy, subtle spice, almond depth, cardamom floral.
