👩‍🍳 How to make Safed Maas

  1. Marinate lamb in yogurt 30 min.
  2. Make smooth paste of onions, ginger, garlic, almonds, cashews.
  3. Heat oil 180°C, fry lamb 5 min, remove.
  4. Cook almond-cashew paste in same oil 8 min until light golden.
  5. Add whole spices, black pepper, cumin, mace, cook 2 min.
  6. Return lamb, add water, salt.
  7. Pressure cook 6 whistles (12 min).
  8. Release, simmer 25 min until lamb tender.
  9. Add coconut milk, cream, simmer 12 min more.
  10. Taste: creamy, subtle spice, almond depth, cardamom floral.
