👩‍🍳 How to make Rajasthani Tikhat Mathiya

  1. Mix maida, wheat flour, carom seeds, black pepper, turmeric, red chili, salt (2 min).
  2. Rub ghee into mixture (3 min) until breadcrumb texture.
  3. Add water gradually, knead 8 min until soft, smooth dough. Rest 15 min.
  4. Divide dough into 24 portions (10g each). Roll each into thin rope (8 inches long, ¼ inch thick).
  5. Twist each rope gently 2–3 times, shape into coil or knot.
  6. Heat oil to 175°C. Fry 2–3 at a time, 3–4 min, turning, until golden, crispy.
  7. Drain on paper.
