👩‍🍳 How to make Rajasthani Stuffed Bajra Paratha

  1. Dough: Mix bajra flour, wheat flour, salt. Rub in 30ml ghee (3 minutes). Add water gradually, knead 8–10 minutes until soft, pliable dough (not sticky, not dry). Rest 15 minutes covered.
  2. Filling: Heat 15ml ghee, add carom seeds (30 seconds), add chopped onions, cook 4 minutes until softened. Add mashed potatoes, turmeric, green chilly, salt. Mix well, cool.
  3. Assemble: Divide dough into 4 portions (80g each). Take one, flatten to thin circle (6 inches). Place 3 tbsp (45g) filling in center. Fold edges, seal, flatten into 7-inch circle, ½ inch thick.
