👩🍳 How to make Rajasthani Stuffed Bajra Paratha
- Dough: Mix bajra flour, wheat flour, salt. Rub in 30ml ghee (3 minutes). Add water gradually, knead 8–10 minutes until soft, pliable dough (not sticky, not dry). Rest 15 minutes covered.
- Filling: Heat 15ml ghee, add carom seeds (30 seconds), add chopped onions, cook 4 minutes until softened. Add mashed potatoes, turmeric, green chilly, salt. Mix well, cool.
- Assemble: Divide dough into 4 portions (80g each). Take one, flatten to thin circle (6 inches). Place 3 tbsp (45g) filling in center. Fold edges, seal, flatten into 7-inch circle, ½ inch thick.
