👩🍳 How to make Rajasthani Sooji Halwa
- Heat ghee in heavy pan (medium heat). Add semolina, roast 4–5 min, stirring constantly, until light golden, nutty aroma.
- Separately, heat water to boil. Add boiling water slowly to roasted semolina, stirring constantly (careful, will sizzle).
- Reduce heat to low, add sugar, salt, stir 2 min until sugar dissolves.
- Add almonds, cashews, raisins, cardamom, mix gently.
- Simmer 8 min, stirring occasionally, until water absorbed, ghee floats on top, halwa comes together.
