👩‍🍳 How to make Rajasthani Sooji Halwa

  1. Heat ghee in heavy pan (medium heat). Add semolina, roast 4–5 min, stirring constantly, until light golden, nutty aroma.
  2. Separately, heat water to boil. Add boiling water slowly to roasted semolina, stirring constantly (careful, will sizzle).
  3. Reduce heat to low, add sugar, salt, stir 2 min until sugar dissolves.
  4. Add almonds, cashews, raisins, cardamom, mix gently.
  5. Simmer 8 min, stirring occasionally, until water absorbed, ghee floats on top, halwa comes together.
