👩🍳 How to make Rajasthani Semolina Halwa
- Dry roast semolina in heavy pan on medium heat, 4–5 minutes, stirring constantly until light golden, nutty aroma. Set aside.
- Heat ghee, add almonds, cashews, raisins, roast 2 minutes until fragrant, golden. Remove with slotted spoon.
- In same ghee, add roasted semolina, stir 2 minutes until well-coated, aromatic.
- Boil 500ml water, slowly add to semolina, stirring constantly to avoid lumps (mixture will sizzle). Be careful of steam.
- Reduce heat to low, add sugar, cardamom, salt. Stir continuously 8–10 minutes until water is absorbed, ghee floats on top, halwa leaves side of pan, comes together.
- Top with roasted nuts and raisins. Serve hot.
