👩‍🍳 How to make Rajasthani Semolina Halwa

  1. Dry roast semolina in heavy pan on medium heat, 4–5 minutes, stirring constantly until light golden, nutty aroma. Set aside.
  2. Heat ghee, add almonds, cashews, raisins, roast 2 minutes until fragrant, golden. Remove with slotted spoon.
  3. In same ghee, add roasted semolina, stir 2 minutes until well-coated, aromatic.
  4. Boil 500ml water, slowly add to semolina, stirring constantly to avoid lumps (mixture will sizzle). Be careful of steam.
  5. Reduce heat to low, add sugar, cardamom, salt. Stir continuously 8–10 minutes until water is absorbed, ghee floats on top, halwa leaves side of pan, comes together.
  6. Top with roasted nuts and raisins. Serve hot.
