👩🍳 How to make Rajasthani Sakinalu
- Make dough with maida, baking powder, salt, ghee, water (knead 8 min). Rest 20 min.
- For filling: heat 30ml ghee, add jaggery, melt (2 min), add sesame seeds, cardamom, cook 1 min. Cool.
- Roll dough into thin sheet (10x10 inch, 2mm thick). Spread filling evenly across sheet.
- Roll tightly from one end into log. Coil log into spiral shape. Cut into 12–14 pieces (1 inch thick).
- Heat oil to 175°C. Fry spirals 4–5 min, turning carefully, until light golden, jaggery oozes slightly.
- Drain on paper.
