  1. Rinse poha quickly 30 seconds under running water, drain immediately (should be moist, not soggy).
  2. Heat oil on medium heat, add cumin seeds (crackle 30 seconds). Add diced onions, cook 2 minutes until softened, translucent.
  3. Add potato cubes, cook 3–4 minutes, stirring frequently, until partially soft but still firm, slight browning.
  4. Add green chilly, turmeric powder, peas, peanuts. Stir well.
  5. Add poha, mix gently, folding carefully to avoid breaking (2 minutes). Cook 2 more minutes until heated through, steam rises.
  6. Add salt, lemon juice, mix gently. Garnish with coriander leaves.
