- Rinse poha quickly 30 seconds under running water, drain immediately (should be moist, not soggy).
- Heat oil on medium heat, add cumin seeds (crackle 30 seconds). Add diced onions, cook 2 minutes until softened, translucent.
- Add potato cubes, cook 3–4 minutes, stirring frequently, until partially soft but still firm, slight browning.
- Add green chilly, turmeric powder, peas, peanuts. Stir well.
- Add poha, mix gently, folding carefully to avoid breaking (2 minutes). Cook 2 more minutes until heated through, steam rises.
- Add salt, lemon juice, mix gently. Garnish with coriander leaves.
