👩🍳 How to make Rajasthani Peda
- Heat ghee in heavy pan (medium-low heat). Add grated khoya, cook 5 min, stirring frequently, until khoya slightly darkens, fragrant.
- Add sugar, stir continuously 8–10 min until sugar dissolves, mixture thickens, pulls away from pan.
- Add cardamom, nutmeg, almonds, pistachios, mix well (2 min).
- Remove from heat. Cool 5 min until warm but handleable.
- Grease hands lightly with ghee. Divide into 14 portions (25g each). Shape into flat oval or round peda (½ inch thick).
- Press silver foil on top if using. Cool completely before storing in airtight container.
