👩‍🍳 How to make Rajasthani Peda

  1. Heat ghee in heavy pan (medium-low heat). Add grated khoya, cook 5 min, stirring frequently, until khoya slightly darkens, fragrant.
  2. Add sugar, stir continuously 8–10 min until sugar dissolves, mixture thickens, pulls away from pan.
  3. Add cardamom, nutmeg, almonds, pistachios, mix well (2 min).
  4. Remove from heat. Cool 5 min until warm but handleable.
  5. Grease hands lightly with ghee. Divide into 14 portions (25g each). Shape into flat oval or round peda (½ inch thick).
  6. Press silver foil on top if using. Cool completely before storing in airtight container.
