- Mix maida, carom seeds, cumin, red chili, turmeric, black pepper, salt (2 min).
- Rub ghee into mixture (3 min) until breadcrumb texture.
- Add water gradually, knead 8 min until firm dough.
- Rest 15 min.
- Divide into 2 portions.
- Roll each thin (¼ inch, 10x10 inch square).
- Cut into ½ inch x 1 inch strips.
- Heat oil to 175°C.
- Fry in batches, 3–4 min, turning frequently, until golden, crispy, no moist areas.
- Drain on paper.
