👩‍🍳 How to make Rajasthani Namak Pare

  1. Mix maida, carom seeds, cumin seeds, red chili, turmeric, black pepper, salt (2 minutes).
  2. Rub in ghee (3 minutes) until breadcrumb texture. Add water gradually, knead 8 minutes until firm dough (slightly firmer than paratha dough). Rest 15 minutes.
  3. Divide dough into 2 portions. Roll each thin (¼ inch, 10x10 inch square). Cut into ½ inch x 1 inch strips using knife.
  4. Heat oil to 175°C. Fry namak pare in batches, 3–4 minutes, turning frequently, until golden, crispy, no moist areas. Drain on paper towels.
  5. Store in airtight container (stays crispy 5–7 days).
