👩🍳 How to make Rajasthani Namak Pare
- Mix maida, carom seeds, cumin seeds, red chili, turmeric, black pepper, salt (2 minutes).
- Rub in ghee (3 minutes) until breadcrumb texture. Add water gradually, knead 8 minutes until firm dough (slightly firmer than paratha dough). Rest 15 minutes.
- Divide dough into 2 portions. Roll each thin (¼ inch, 10x10 inch square). Cut into ½ inch x 1 inch strips using knife.
- Heat oil to 175°C. Fry namak pare in batches, 3–4 minutes, turning frequently, until golden, crispy, no moist areas. Drain on paper towels.
- Store in airtight container (stays crispy 5–7 days).
