👩🍳 How to make Rajasthani Mysore Pak
- Heat 100ml ghee in pan (medium heat). Add gram flour slowly, stir continuously 8–10 min until light golden, nutty aroma.
- In separate pan, boil water, add sugar, stir until dissolved (3 min), making light syrup.
- Pour sugar syrup slowly into roasted gram flour, stirring constantly (mixture will sizzle, steam).
- Reduce heat to low, add remaining 100ml ghee in portions, stirring continuously.
- Keep stirring 5–8 min until mixture thickens, pulls away from pan, becomes darker golden.
- Add cardamom, almonds, cashews, salt, mix well (2 min).
- Pour onto greased 8x8 inch pan, flatten with greased spatula to ½ inch thickness.
- Cool 20 min, cut into diamonds or squares. Cool completely before storing.
