👩‍🍳 How to make Rajasthani Mysore Pak

  1. Heat 100ml ghee in pan (medium heat). Add gram flour slowly, stir continuously 8–10 min until light golden, nutty aroma.
  2. In separate pan, boil water, add sugar, stir until dissolved (3 min), making light syrup.
  3. Pour sugar syrup slowly into roasted gram flour, stirring constantly (mixture will sizzle, steam).
  4. Reduce heat to low, add remaining 100ml ghee in portions, stirring continuously.
  5. Keep stirring 5–8 min until mixture thickens, pulls away from pan, becomes darker golden.
  6. Add cardamom, almonds, cashews, salt, mix well (2 min).
  7. Pour onto greased 8x8 inch pan, flatten with greased spatula to ½ inch thickness.
  8. Cool 20 min, cut into diamonds or squares. Cool completely before storing.
