👩🍳 How to make Rajasthani Mirchi Bada
- Filling: Mix mashed potato, onion, ginger, cumin, salt (3g), coriander. Divide into 20 portions.
- Batter: Mix gram flour, turmeric, red chili, salt (2g). Add water gradually, mix until thick batter (like dosa batter), no lumps. Rest 5 min.
- Stuff chillies: Carefully remove seeds from slit. Stuff 1 tbsp potato filling into each chilli.
- Coat & fry: Dip stuffed chilli into batter, coat completely. Heat oil to 175°C. Fry 2–3 mirchi badas at a time, 4–5 min, turning halfway, until golden, crispy outside, filling cooked inside. Drain on paper.
- Serve: Serve hot with tamarind chutney, green chutney, or as is.
