👩‍🍳 How to make Rajasthani Mawa Kachori

  1. Dough: Prepare same as Pyaz Kachori. Rest 20 minutes.
  2. Filling: Mix grated mawa, almonds, pistachios, raisins, sugar, cardamom powder, dry ginger powder. Mix thoroughly (2 minutes). Filling should be uniform, moist.
  3. Assemble & Fry: Divide dough into 24 portions. Roll, fill (15g each), seal as before. Fry at 170°C, 4 minutes, turning halfway, until light golden, crispy, mawa slightly bulges out.
