👩‍🍳 How to make Rajasthani Malpua

  1. Batter: Mix maida, baking powder, salt. Add milk gradually, mix into thin batter. Add grated khoya, cardamom, sugar, mix gently.
  2. Syrup: Boil 300ml water, add sugar, stir until dissolved. Add cardamom, simmer 8 min. Cool, add rose water.
  3. Fry malpua: Heat oil to 170°C. Pour ¼ cup (60ml) batter into oil, creating small round pancake (3 inches). Fry 1–2 min per side until golden. Drain on paper, immediately dip in cooled syrup (1 sec each side), transfer to plate.
  4. Serve: Arrange on plate, pour rabri generously on top, garnish with almonds, pistachios. Serve at room temperature.
