- Marinate mutton in yogurt 45 min.
- Heat oil 190°C, fry onions 10 min until golden, deeply browned.
- Remove half.
- In remaining oil, make ginger-garlic paste, cook 2 min.
- Add red chili, turmeric, garam masala, cook 2 min.
- Add marinated mutton, cook 5 min.
- Return half fried onions, add water, salt, whole spices.
- Pressure cook 8 whistles (16 min).
- Release, simmer 20 min until meat very tender, gravy thickens, oil visible.
- Garnish with coriander, fried onions.
- Taste: intense chili burn, meat melt-in-mouth tender, layered spices.
