  1. Marinate mutton in yogurt 45 min.
  2. Heat oil 190°C, fry onions 10 min until golden, deeply browned.
  3. Remove half.
  4. In remaining oil, make ginger-garlic paste, cook 2 min.
  5. Add red chili, turmeric, garam masala, cook 2 min.
  6. Add marinated mutton, cook 5 min.
  7. Return half fried onions, add water, salt, whole spices.
  8. Pressure cook 8 whistles (16 min).
  9. Release, simmer 20 min until meat very tender, gravy thickens, oil visible.
  10. Garnish with coriander, fried onions.
  11. Taste: intense chili burn, meat melt-in-mouth tender, layered spices.
