👩🍳 How to make Rajasthani Khir
- Drain rice. Heat ghee in heavy pan, add drained rice, stir 2 min until translucent.
- Add 800ml milk, bring to boil, simmer on low heat 15 min, stirring occasionally, until rice soft, milk reduced to 500ml (roughly half).
- Add sugar, crushed cardamom, stir well (2 min).
- In separate small pan, toast almonds, cashews, raisins in ghee (30s each), remove.
- Add saffron-infused milk to rice pudding, mix well. Simmer 5 min more until khir thickens slightly, coats spoon.
- Add toasted nuts, nutmeg powder. Mix gently. Remove from heat.
- Serve warm or chilled, garnished with extra nuts.
