👩‍🍳 How to make Rajasthani Khir

  1. Drain rice. Heat ghee in heavy pan, add drained rice, stir 2 min until translucent.
  2. Add 800ml milk, bring to boil, simmer on low heat 15 min, stirring occasionally, until rice soft, milk reduced to 500ml (roughly half).
  3. Add sugar, crushed cardamom, stir well (2 min).
  4. In separate small pan, toast almonds, cashews, raisins in ghee (30s each), remove.
  5. Add saffron-infused milk to rice pudding, mix well. Simmer 5 min more until khir thickens slightly, coats spoon.
  6. Add toasted nuts, nutmeg powder. Mix gently. Remove from heat.
  7. Serve warm or chilled, garnished with extra nuts.
