  1. Heat oil to 180°C, crackle mustard 1 min, fenugreek 30s, add cumin 30s.
  2. Add ginger, green chilly, onion, cook 2 min.
  3. Add parboiled potato, cook 3 min.
  4. Add turmeric, red chili, coriander, asafoetida, salt, amchur.
  5. Mix gently, cover, cook 10 min until potatoes tender, oil visible, slight browning at edges.
  6. Add coriander, lemon juice if extra tanginess needed.
  7. Taste: tangy-spicy, potatoes creamy inside, crispy edges.
