- Heat ghee in heavy-bottomed pan (medium heat). Add grated carrots, cook 10 min, stirring frequently, until carrots soften, moisture evaporates (mixture should be moist, not dry).
- Add milk, mix well. Simmer 15 min until carrots fully cooked, tender, milk mostly absorbed.
- Add sugar, salt, stir until dissolved (3 min).
- Add almonds, cashews, raisins, cardamom, cook 5 min more until ghee visible on top, color darkens to reddish-brown.
