👩‍🍳 How to make Rajasthani Corn Flour Khichdi

  1. Mix corn flour and gram flour together, set aside.
  2. Heat ghee in heavy pan, add cumin seeds (crackle 30 seconds). Add chopped onion, cook 2 minutes until soft.
  3. Add green chilly, cook 30 seconds. Add flour mixture, stir 2 minutes until well-coated, light golden aroma.
  4. Slowly add 600ml water, stirring constantly to avoid lumps (mixture will steam).
  5. Add turmeric and salt. Reduce heat to low, cover, cook 10 minutes, stirring occasionally, until water absorbed, grains tender, creamy.
  6. Top with coriander leaves. Serve hot.
