👩🍳 How to make Rajasthani Corn Flour Khichdi
- Mix corn flour and gram flour together, set aside.
- Heat ghee in heavy pan, add cumin seeds (crackle 30 seconds). Add chopped onion, cook 2 minutes until soft.
- Add green chilly, cook 30 seconds. Add flour mixture, stir 2 minutes until well-coated, light golden aroma.
- Slowly add 600ml water, stirring constantly to avoid lumps (mixture will steam).
- Add turmeric and salt. Reduce heat to low, cover, cook 10 minutes, stirring occasionally, until water absorbed, grains tender, creamy.
- Top with coriander leaves. Serve hot.
