👩‍🍳 How to make Rajasthani Chikhalwali Pakora

  1. Mix gram flour, turmeric, red chili, salt (2 min). Add chopped spinach, onion, green chilly, ginger, coriander.
  2. Add water gradually, mix until thick batter (no lumps, batter should hold shape when dropped).
  3. Heat oil to 175°C. Drop spoonfuls (about 1 tbsp) of batter into oil (pakoras).
  4. Fry 3–4 at a time, 2–3 min per side, until light golden, crispy outside, cooked inside.
  5. Drain on paper towels.
  6. Serve hot with tamarind chutney or green chutney.
