👩🍳 How to make Rajasthani Chikhalwali Pakora
- Mix gram flour, turmeric, red chili, salt (2 min). Add chopped spinach, onion, green chilly, ginger, coriander.
- Add water gradually, mix until thick batter (no lumps, batter should hold shape when dropped).
- Heat oil to 175°C. Drop spoonfuls (about 1 tbsp) of batter into oil (pakoras).
- Fry 3–4 at a time, 2–3 min per side, until light golden, crispy outside, cooked inside.
- Drain on paper towels.
- Serve hot with tamarind chutney or green chutney.
