- Heat oil, add cumin (30s).
- Add ginger, green chilly, onion, cook 2 min.
- Add chopped spinach, cook 3 min until wilted.
- Add water, salt, turmeric.
- In separate bowl, mix gram flour with ¼ cup water to smooth paste.
- Add to spinach slowly, stirring continuously to avoid lumps.
- Cook 10 min until gram flour cooked (no raw smell), oil visible on top.
- Add red chili, coriander, asafoetida.
- Cook 2 min.
- Taste: spinach earthy, gram flour nutty, spiced.
