👩‍🍳 How to make Rajasthani Baked Masala Bati

  1. Mix wheat flour, maida, baking powder, carom seeds, cumin seeds, red chili, turmeric, black pepper, salt (2 minutes).
  2. Rub in ghee (3 minutes) until breadcrumb texture. Add yogurt and water gradually, knead 8 minutes until soft dough. Rest 15 minutes.
  3. Divide into 12 portions (20g each). Roll each into ball, flatten slightly into oval (½ inch thick).
  4. Preheat oven to 220°C (425°F). Place batis on greased tray. Brush tops with ghee (5ml total).
  5. Bake 20–25 minutes until light golden, hollow sound when tapped, cooked through. Cool 5 minutes on tray.
  6. Serve hot with ghee, sprinkled with red chili powder, salt, or with curry.
