👩🍳 How to make Rajasthani Baked Masala Bati
- Mix wheat flour, maida, baking powder, carom seeds, cumin seeds, red chili, turmeric, black pepper, salt (2 minutes).
- Rub in ghee (3 minutes) until breadcrumb texture. Add yogurt and water gradually, knead 8 minutes until soft dough. Rest 15 minutes.
- Divide into 12 portions (20g each). Roll each into ball, flatten slightly into oval (½ inch thick).
- Preheat oven to 220°C (425°F). Place batis on greased tray. Brush tops with ghee (5ml total).
- Bake 20–25 minutes until light golden, hollow sound when tapped, cooked through. Cool 5 minutes on tray.
- Serve hot with ghee, sprinkled with red chili powder, salt, or with curry.
