👩‍🍳 How to make Rajasthani Aloo Tikki

  1. Mix mashed potato, onion, green chilly, ginger, gram flour, cumin seeds, coriander, salt, black pepper (3 min). Mixture should hold together.
  2. Divide into 16 portions (30g each). Shape each into flat round patty (2.5 inch diameter, ½ inch thick).
  3. Heat oil to 175°C. Fry 2–3 tikkis at a time, 3 min per side, until golden, crispy edges, soft inside.
  4. Drain on paper.
  5. Serve with tamarind chutney, green chutney, or as part of aloo tikki chaat.
