👩🍳 How to make Rajasthani Aloo Paratha Gravy
- Paratha: Make dough with flour, salt, water, rest 15 min. For filling: mix mashed potato with cumin, green chilly, ginger, salt. Divide dough into 4 portions (50g each). Roll, fill (50g filling), seal, flatten to 7-inch circle. Cook on tawa 180°C, 3 min per side until golden spots, crispy, ghee drizzle.
- Gravy: Heat oil, cook onion 3 min until soft. Add tomato, cook 3 min until soft. Add turmeric, red chili, coriander, salt, cook 1 min. Add water, simmer 10 min until gravy thickens slightly, oil visible. Add coriander. Serve paratha with gravy.
