- Soak dal 30 min, drain.
- Heat ghee, add cumin (30s), curry leaves (crackle 20s), green chilly, ginger, cook 1 min.
- Add dal, cook 2 min.
- Add water, turmeric, salt, bring to boil.
- Pressure cook 5 whistles (10 min).
- After release, add grated mango, red chili, coriander, asafoetida.
- Simmer 8 min until mango breaks down.
- Add jaggery, cook 2 min more.
- Taste: tangy-sour from mango, spicy, jaggery sweetness balanced.
