  1. Soak dal 30 min, drain.
  2. Heat ghee, add cumin (30s), curry leaves (crackle 20s), green chilly, ginger, cook 1 min.
  3. Add dal, cook 2 min.
  4. Add water, turmeric, salt, bring to boil.
  5. Pressure cook 5 whistles (10 min).
  6. After release, add grated mango, red chili, coriander, asafoetida.
  7. Simmer 8 min until mango breaks down.
  8. Add jaggery, cook 2 min more.
  9. Taste: tangy-sour from mango, spicy, jaggery sweetness balanced.
