- Soak all dals 30 min, drain.
- Heat ghee, crackle cumin (30s), add ginger-green chilly paste.
- Add soaked dals, cook 2 min.
- Add water, turmeric, salt.
- Pressure cook 6 whistles (12 min).
- After pressure releases, add red chili, coriander, asafoetida, tamarind.
- Simmer 5 min.
- Consistency: flowing, each dal separated.
- Serve with baati or roti.
