  1. Soak all dals 30 min, drain.
  2. Heat ghee, crackle cumin (30s), add ginger-green chilly paste.
  3. Add soaked dals, cook 2 min.
  4. Add water, turmeric, salt.
  5. Pressure cook 6 whistles (12 min).
  6. After pressure releases, add red chili, coriander, asafoetida, tamarind.
  7. Simmer 5 min.
  8. Consistency: flowing, each dal separated.
  9. Serve with baati or roti.
