- Soak rajma overnight, drain.
- Pressure cook with fresh water, turmeric, salt, 6 whistles (12 min).
- Release, drain (keep cooking liquid 300ml).
- Heat oil, fry onions 6 min until golden.
- Add ginger-garlic, cook 1 min.
- Add tomatoes, cook 3 min.
- Add red chili, coriander, cumin, garam masala, cook 2 min.
- Add cooked rajma, reserved liquid, simmer 20 min until beans tender, gravy thickens.
- Add coriander.
- Taste: beans creamy, tomato base, spiced, slightly thick gravy.
