👩‍🍳 How to make Marwari Rajma

  1. Soak rajma overnight, drain.
  2. Pressure cook with fresh water, turmeric, salt, 6 whistles (12 min).
  3. Release, drain (keep cooking liquid 300ml).
  4. Heat oil, fry onions 6 min until golden.
  5. Add ginger-garlic, cook 1 min.
  6. Add tomatoes, cook 3 min.
  7. Add red chili, coriander, cumin, garam masala, cook 2 min.
  8. Add cooked rajma, reserved liquid, simmer 20 min until beans tender, gravy thickens.
  9. Add coriander.
  10. Taste: beans creamy, tomato base, spiced, slightly thick gravy.
