- Blanch spinach 3 min in boiling water, drain, squeeze dry, blend smooth (150ml).
- Heat oil, crackle cumin 30s.
- Add ginger, garlic, green chilly, cook 1 min.
- Add spinach purée, turmeric, garam masala, salt, cook 5 min.
- Add cream, water, mix well, simmer 5 min.
- Gently add paneer cubes (don't stir hard), simmer 8 min until paneer warm, sauce creamy.
- Add coriander.
- Taste: spinach earthy, paneer soft, mild spice, cream richness.
