👩‍🍳 How to make Marwari Palak Paneer

  1. Blanch spinach 3 min in boiling water, drain, squeeze dry, blend smooth (150ml).
  2. Heat oil, crackle cumin 30s.
  3. Add ginger, garlic, green chilly, cook 1 min.
  4. Add spinach purée, turmeric, garam masala, salt, cook 5 min.
  5. Add cream, water, mix well, simmer 5 min.
  6. Gently add paneer cubes (don't stir hard), simmer 8 min until paneer warm, sauce creamy.
  7. Add coriander.
  8. Taste: spinach earthy, paneer soft, mild spice, cream richness.
