👩🍳 How to make Laal Maas
- Marinate mutton in yogurt 30 min.
- Make paste of onions, ginger, garlic.
- Heat oil to 190°C, fry mutton 5 min, remove.
- In same oil, cook onion paste 8 min until golden.
- Add red chili, turmeric, garam masala, cumin.
- Cook 2 min.
- Return mutton, cook 5 min.
- Add whole spices (cinnamon, clove, cardamom, bay), add water, salt.
- Pressure cook 8 whistles (16 min).
- After pressure release, simmer 20 min until meat tender, gravy reduced, oil floats on top.
- Heat: intense red chili burn, slow build in mouth.
