👩‍🍳 How to make Laal Maas

  1. Marinate mutton in yogurt 30 min.
  2. Make paste of onions, ginger, garlic.
  3. Heat oil to 190°C, fry mutton 5 min, remove.
  4. In same oil, cook onion paste 8 min until golden.
  5. Add red chili, turmeric, garam masala, cumin.
  6. Cook 2 min.
  7. Return mutton, cook 5 min.
  8. Add whole spices (cinnamon, clove, cardamom, bay), add water, salt.
  9. Pressure cook 8 whistles (16 min).
  10. After pressure release, simmer 20 min until meat tender, gravy reduced, oil floats on top.
  11. Heat: intense red chili burn, slow build in mouth.
