👩‍🍳 How to make Gatte Ki Sabji

  1. Gatte: Mix gram flour, turmeric, carom seeds, salt, red chili, oil. Add water gradually, knead 10 min until smooth, dough (should hold together). Roll into thick log (2cm diameter, 15cm long). Boil water in pot, add gatte log, cover, cook 15 min until floating. Cool, cut into ½-inch pieces.
  2. Curry: Heat oil, crackle cumin 30s, add green chilly, cook 30s. Add turmeric, red chili, garam masala, cook 1 min. Add yogurt whisked with 400ml water, salt. Bring to boil, simmer 5 min. Add gatte pieces, kasuri methi. Simmer 10 min more until gatte soft, flavors meld. Taste: tangy from yogurt, spicy, herbal from kasuri methi.
