👩🍳 How to make Bajra Khichdi
- Dry roast bajra 4 min until nutty, cool.
- Soak moong 30 min, drain.
- Heat ghee, crackle cumin 30s, add ginger, green chilly, onion, cook 2 min.
- Add moong, cook 2 min.
- Add roasted bajra flour slowly, stirring constantly.
- Add water, turmeric, salt, pepper.
- Reduce to low, cover, cook 15 min, stirring occasionally.
- Consistency: thick khichdi, each grain distinct.
- Serve with ghee dollop, pickle.
