👩‍🍳 How to make Bajra Khichdi

  1. Dry roast bajra 4 min until nutty, cool.
  2. Soak moong 30 min, drain.
  3. Heat ghee, crackle cumin 30s, add ginger, green chilly, onion, cook 2 min.
  4. Add moong, cook 2 min.
  5. Add roasted bajra flour slowly, stirring constantly.
  6. Add water, turmeric, salt, pepper.
  7. Reduce to low, cover, cook 15 min, stirring occasionally.
  8. Consistency: thick khichdi, each grain distinct.
  9. Serve with ghee dollop, pickle.
