👩🍳 How to make Urad Dal Kachori
- Make dough (10 mins): Mix flour, salt. Add ¼ cup ghee, rub breadcrumb texture. Add water, knead stiff dough. Rest 30 mins.
- Soak urad dal (2 hours): Rinse urad 3 times, soak 2 hours, drain completely.
- Prepare filling (8 mins, medium heat): Heat ½ tbsp ghee, crackle cumin seeds (30 secs). Add onion, fry 1 min. Add ginger, green chilies, fry 1 min. Coarsely grind soaked urad (should be grainy). Add to pan, cook 3-4 mins on medium heat, stirring constantly until dry. Add turmeric, chili powder, cumin, coriander, asafoetida. Toss 1 min. Cool, add mango powder, coriander, salt.
- Shape kachoris (15 mins): Roll dough thin 4-inch discs. Fill with 1 tbsp urad mixture, fold half-moon, seal edges firmly.
- Deep fry (12 mins, medium heat): Oil 350°F. Fry 4 at time for 8-10 mins, turning frequently—exterior medium-golden, interior fluffy, fully cooked.
