👩🍳 How to make Til Chikki
- Dry roast sesame (4 mins, medium heat): Heat sesame seeds in a dry pan on medium heat, stirring constantly for 4 minutes until light brown and fragrant (visual cue: seeds turn pale golden, release nutty aroma).
- Set seeds aside (1 min): Transfer seeds to plate (visual cue: no longer hot to touch).
- Heat jaggery (3 mins, medium heat): In same pan, heat ghee, then add jaggery (broken into pieces). Cook on medium heat for 3 minutes while stirring until jaggery melts completely (visual cue: jaggery becomes liquid, dark brown, slightly darker at edges).
- Combine (1 min, medium heat): Add roasted sesame seeds to melted jaggery. Mix quickly and thoroughly to coat all seeds (visual cue: seeds are evenly coated with jaggery, mixture becomes thick).
- Add spice (30 seconds): Add cardamom powder if using. Mix immediately.
- Set (2 mins): Quickly transfer mixture to greased parchment paper. Press with oiled spatula to ¼-inch thickness (visual cue: smooth surface, ¼-inch thickness, shiny appearance).
- Cool & break (15 mins): Cool completely at room temperature until hardened. Break into 16 pieces (visual cue: brittle, can be broken along natural lines).
